Navy beans are small, pea-sized beans that are creamy white in colour. They are mild-flavoured beans that are dense and smooth. The “White Pea Bean” was such a popular food on early U.S. Naval vessels in the mid 1800s that it became known as the Navy bean.
The dense cooked beans have a soft texture and a mild flavour, and can easily absorb the flavour of other ingredients in the cooking process. Navy beans are naturally high in protein, dietary fibre, iron, and folate, low in fat, and cholesterol- and gluten-free.
Wash & Soak- Wash beans, place in a bowl with 3' of water above the beans. Soak 6 to 8 hours or overnight. Discard soaking water.
Place in pot with 3" of water, above beans, bring to a boil, turn off heat, cover, and let sit 1 1/2 hours. Discard soak water.
Cook in a heavy pot 3 cups water to 1 cup soaked beans. Bring to a boil. Cover, reduce to simmer for about 2 hours, or until beans are softened to your liking. Add water to beans as needed.
Use in baked bean dishes, stews, salads and soups
1. Add navy beans to soups, stews, casseroles, and salads.
2. Common uses include baked beans and minestrone soup.
3. Puree and use to thicken soups and stews.
4. Serve with whole grains, like brown rice, for high quality plant protein on par with that found in meats and dairy.
