Lentils are one of the most nutritious and versatile plant-based proteins. Yellow lentils have a mild and sweet flavour. It is packed with B Vitamins, Magnesium, Zinc and Potassium.
Yellow lentils do not hold their shape and become mushy when cooked. Often used for thickening soups, purees, stews, curries, spreads or lentil curries.
To cook: Cover 1 cup of yellow lentils with 3 cups of water or broth. Bring to a boil. Reduce heat and simmer 10-15 minutes or until tender.
