Use in salads, dips, soups, stews, curries, hummus and in making the popular falafel.
To cook: Soak overnight, rinse and combine 1 cup garbanzo beans with 4 cups water (enough to cover the beans completely) in a large pot. Bring to a boil, reduce heat and simmer, cooking until tender (approximately 2 hours).
