Wheat berries are the edible part of the wheat kernel, including the bran, the germ, and the endosperm. You can use this chewy, nutty, high-fiber whole grain like you would any other whole grain. Wheat berries are filled with fiber, protein and iron.
Add 1 cup grain to 2 cups boiling water, cover, reduce heat and simmer for approximately 1 hour or until soft (For quicker cooking, soak wheat berries overnight first.). Drain.
Use cooked wheat berries like you would rice or any other whole grain, in soups, salads, side dishes, as a base for a stir-fry or simmer them in milk for a breakfast porridge.
You can even add water to the berries to grow wheat grass!
