Organic amaranth is a sweet, earthy and gluten-free seed. It’s extremely high in protein, iron, and fibre, and is a staple in gluten-free diets.
Amaranth is often used as an alternative to rice or other grains. It can be cooked into stir fries, soups & stews or heated until turned into miniature puffs (like tiny popcorn).
To cook, rinse first and then bring 1 ½ cups water to a boil, add ½ cup amaranth stirring frequently, and simmer 20 -25 minutes or until at desired texture.
