Organic kidney beans like all dry vegetables have the highest protein content of all plant – based foodstuffs. Red kidney beans have a high level of iron, magnesium, phosphorus, vitamin B9 and extremely rich in fibre.
Usage: Use in soups and stews, serve cold atop a fresh salad, or mash with your choice of spices for a unique sandwich spread.
Red kidney beans must be soaked prior to cooking (preferably overnight). Rinse and place in a large pot, covered with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60-90 minutes, until tender. This bean produces foam when boiling, so skim the water regularly.
